melty mangoes

On this journey to broaden my horizons, one thing I hadn't tried yet was mangoes! They are a delicious, succulent treat that I must suggest to anyone who has never had the opportunity to try. I am the type of person to be intimidated by foods of the unknown at the grocery store, so stepping out of my shell and trying something new from the produce section was quite the experiment. My first surprise was the seed! Beware if you try one of these at home that you're going to hit something hard in the middle of this ripe fruit, and you won't be able to cut through it. The thing was HUGE. After getting around it the fruit was very easy to slice though. Baking at 425 for 12 minutes, the 2 TBSP of brown sugar melted right over the mangoes, creating an ooey gooey dessert. Topping off with a few chopped walnuts before baking really gives it that satisfying crunch, too!
