learning to love leftovers

So this wasn't a recipe from my recent purchase, 50 Shades of Kale, but it did turn out to be a fantastic way to jazz up some not-so-appetizing leftovers! I had tried Quiznos' new Mac & Cheese Toasty Pasta last night but only ate about half. After sitting in the fridge over night it wasn't exactly the creamy, cheesy dish I remembered from the night before. Of course, I didn't want it to go to waste! I rummaged through the kitchen and came out with some kale which I sauteed on the stove, added in the pasta, and threw in a teaspoon of canola oil and 2 TBSP of ooey gooey melted Velveeta Queso Blanco cheese. It turned out delicious! Topping it off with a little parmesan cheese gave it just the right touch to still be a bit fancy! And let's face it... everyone could use a little fancy in their life! :)
